A Gourmet Food Recipe Fit For A Prince

Many Italian gourmet food consists of meat. One Italian dish, however, is noted for using different kinds of meat. It is called Bollito Misto alla Piemontese.

Essentially, this gourmet food recipe is centered on boiled meat. In fact, in the last century, Crown Prince Vittorio Emanuele of Torino used to get out of the palace at night and drive off to Monclavo, Italy. There, he and his friends enjoy a good serving of this bollisto misto.

The gourmet food recipe, consists of seven kinds of meat, seven kinds of vegetables and seven condiments. The variety of each meat is especially important because they should compliment each other. Common meats that are used include beef, veal, pork, chicken, tongue, zampone, and any other cuts.

For this gourmet food recipe, the meat should come from older animals. The older they are, the more flavorful their meat is. Since bollisto misto is meant to be shared food, the slices should be large.

Preparing bollisto misto is pretty straightforward. Pour some water in a pot. The water should be enough to cover the meat. Add vegetables such as carrots, celery and onion. Add a little salt to the water. Then, bring the water to a boil.

When the water is boiling, add the hard meats such as beef, pork and veal. Simmer for an hour until the juices are sealed. In another boiling pot of salted water, cook soft meat such as chicken or zampone. Bring to a boil and simmer until they are very tender.

While waiting for the meats to tenderize, you can prepare the condiments. Most of the condiments can be brought in a gourmet store. You can prepare them yourself but it takes a lot of time.

Popular condiments for this gourmet food recipe are honey sauce, bagnet ross, bagnet vert, salsa del' pov'rom or poor man's sauce and the jelly like mostarda d'uva.

In addition, prepare seven kinds of vegetables. The vegetable seasons will determine the availability of vegetables. However, you must have onions, celery or potatoes. Slice and boil them until they are tender.

To serve the bollisto misto, place the slices of meat on a deep plate. On top of the meat, add the softened vegetables. Then, pour a ladle of the hot broth to the arrangement.

The condiments are served separately in bowls. Take a serving spoon and spread each of the condiments on the meat. If you prefer, you can cut a piece of bite-sized meat and dip them in each of the condiment bowl.

Of course, nothing completes the gourmet food recipe with wine. A glass of red wine, Barbera D' Asti, Dolcetto di Dogliani or Bardolino is perfect.
